Whenever I am menu planning I am guilty of throwing in too many carbs. This winter I haven’t felt too well and I have been less active. Being less active has made it a struggle to maintain my weight. I’ve decided to cut back on carbs a little to help get myself headed in the right direction. Hear me loud and clear, I’m doing reduced carbs, not going carb free. I know I can’t stick to an eating plan that has me eliminating anything. I can however limit things that slow me down. Last night’s menu was Pork Chops. I always throw in mashed potatoes with pork chop. We are from the south, you gotta have your meat and potatoes, right? Well my niece was coming over for dinner and she and her husband are doing low carb. I didn’t want to be a stumbling block in her journey, so I created this recipe for Cheesy Cauliflower Broccoli Casserole. It was kind of born from a potato. I took some of my favorite ingredients from a hashbrown casserole and substituted broccoli and cauliflower. Then when I was making it I was talking and forgot some of the classic hashbrown casserole ingredients. I originally meant to add bacon and onions but obviously I can’t cook and socialize at the same time. The end result was a fantastic side dish that was perfect even without the bacon. I really didn’t miss my beloved potatoes which I did prepare for my very southern husband. This recipe is a keeper and a great recipe for a carb conscious diet. Cheesy Broccoli Cauliflower Casserole
I package of frozen broccoli (Cook 5 minutes in the microwave and then use a chopper to dice it into fine pieces. I used a hand chopper. I suppose a food processor would work fine.)
I package of riced cauliflower ( Mine was seasoned with garlic and herb seasoning. I microwaved it 3 minutes to thaw it. )
1 cup plain nonfat Greek yogurt
1/2 cup Hellman’s light mayonnaise
1/2 teaspoon salt
1/2 teaspoon of pepper
1/2 teaspoon onion powder
3 tablespoons of fat free half and half – (you could use skim milk )
1 cup Kraft fat free cheddar cheese
1/2 cup Kraft fat free mozzarella cheese
6 slices of pre-cooked bacon
1/4 cup finely diced onion
Mix all the ingredients together and pour in a 7×11 casserole dish. Bake at 350 for 30 minutes. Then turn the oven over to broil and broil 4-5 minutes until it gets golden brown on top.
Makes 8 servings at 2SP each for those following the WW plan. If you add the bacon and onion, it will remain 2SP per serving.
