It’s that time of year again. Our peach tree is bursting with beautiful peaches. First I have to tell you a little about the beloved tree. We planted this tree 20 years ago when we got our new camper. Our camper is parked at my happy place, the lake. What precious memories come from this tree. I bought it when my kids were babies. It was on sale at K-Mart for $7. It was suppose to be an ornamental peach tree. Not to be confused with a Japanese Ornamental Peach Tree. You see, my sister-in-law had bought us two Japanese Ornamental Peach Trees for the front of our house. I knew they were very expensive, soI thought I had hit the lottery when I found my “ornamental” peach tree for $7. Needless to say, they are not the same! We have trimmed this tree back by half each year, and just like my kids, it keeps growing. No matter what, they were going to grow up on us, the tree and the kids. I have memories of the peaches being so little we couldn’t do anything with them to my mother – in- law canning every one she could get her hands on. As the years have passed, the tree does not bear as much fruit, but the fruit has gotten bigger and juicer. I guess you could say, sweeter with time.
Today as I picked a peach from the tree, I couldn’t help but think of another fond memory that involved peaches, peach cobbler! I remember making my first cobbler with my Aunt Tink. She lives in Alabama and each summer she would come to visit my grandmother who just happened to live next door to us. We usually had dinner together every night. One afternoon she said I’m going to teach you to make peach cobbler, and it’s so easy to make you will never forget it. She was right. I’ve made peach cobbler with the same recipe until today. I was at the camper alone with a lovely peach. I could just hear it calling me…cobbler, cobbler, cobbler. I came up with this recipe for a mini cobbler that is a little healthier than the peach cobbler of my childhood. The good news is it was every bit as delicious as the full fat version. Seriously, you have got to make this! I don’t think it will be long before I hear those words again…cobbler, cobbler, cobbler!
Cobbler for 1
1 large peach peeled and sliced
1 tablespoon erythritol
2 tablespoons of Pillsbury sugar free yellow cake mix
4 tablespoons of diet 7-up or Diet Sprite
6 Sprays of butter flavored cooking spray
1 pinch of cinnamon
1/4 teaspoon sugar
Optional: Fat free Reddi Wip or sugar free vanilla ice cream
Layer the peach in a small baking dish. (I bought my little dish at Michaels Crafts for around $2.00.)
Sprinkle 1 tablespoon of erythritol on the peaches.
Sprinkle with two tablespoons of cake mix.
Pour 4 tablespoons of 7-Up over the dry cake mix.
Spritz with cooking spray.
Bake at 350 around 15-20 minutes or until the peaches are soft and the topping has started to brown.
Remove from the oven and sprinkle with cinnamon and 1/4 teaspoon of sugar.
Spritz with 3 more sprays of butter flavored cooking spray.
Return to the oven for 5 more minutes.
You can serve warm with light ice cream or Fat Free Reddi Wip.
Cobbler for 1 is 2SP
Aunt Tink’s Cobbler
Melt 1 stick of butter or margarine in a 9×13 baking dish in a 350 degree oven.
While the butter is melting, mix 1 cup each of flour, sugar and milk. Whisk until the lumps disappear. When the oven has preheated, remove the pan from the oven and pour peaches over the butter. Do not stir. Pour the batter evenly over the peaches. Do not stir.
Bake at 350 for 45 minutes or until the crust is deep golden brown.
