Cornmeal Crusted Chicken Breast

Since Weight Watchers switched over to Freestyle, I’ve had my fair share of grilled chicken. I can say I have been known to get caught up in the fact the it is 0SP and I have just about burnt myself out on grilled chicken breast. After my success with https://mona4lifetime.blog/2018/07/19/the-bounty-is-in/ , I decided to try cornmeal breaded chicken breast. Oh my, it is so good! Once again I had the crunch and flavor of fried foods without all the added fat and calories. Not to mention all the mess that goes with frying foods. I’m already looking forward to what I can fix next with the seasoned cornmeal. Give this recipe a try. I think you will like it. Even my daughter gave it a thumbs up.

Serves 4 at 2SP each

Cornmeal Crusted Chicken Breast

4 chicken breast cutlets

1 beaten egg

3 tablespoons yellow cornmeal (not cornmeal mix)

1/4 teaspoon salt

1/4 teaspoon pepper

1/2 tablespoon Goya Adobo all purpose seasoning

1&1/2 teaspoons canola oil

Cooking spray

Mix cornmeal mix and seasoning together and place in a shaker. Shake to mix thoroughly. You will find a tip about the shaker at the end of this post.

Dip chicken breast in beaten egg.

Place chicken breast on a platter and sprinkle seasoned cornmeal mix on both sides of the chicken.

Heat a large iron skillet or nonstick pan over medium heat. Add 1&1/2 teaspoons of canola oil and coat the pan evenly. Then spray the pan with cooking spray.

Spray the top of your chicken breast with cooking spray also. Place sprayed side down in your hot pan. Cook 3-4 minutes until golden brown.

Spray the top side of the chicken breast again and turn the chicken breast over and cook another 3-4 minutes.

Check chicken after 8 minutes. The cooking times will very depending on the thickness of your chicken.

***Tip for the seasoned cornmeal mix. I suggested in an earlier post to place the seasoned mix in a salt shaker with large holes. Debbie Penley tried my recipe for the crispy squash and she suggested using a recycled seasoning container. (Like an old paprika shaker.) It worked beautifully. I like the fact that it is sealed up and you can continue to use the mix for different recipes.

***You can kick the flavor of your chicken up a bit by adding a few dashes of hot sauce to your beaten egg. It doesn’t make the chicken hot, it just adds lots of flavor.

Also, there is a famous copycat recipe for chicken that calls for soaking your chicken in dill pickle juice for a few hours. I think that would work great for this recipe.
