The Bounty Is In

We have never had any success at raising a garden around our house. When you build your house in the middle of the woods, you must remember the deer were here first! I guess that’s the price you have to pay for privacy. After raising the deer a garden for a few years, we were no longer entertained by their lack of sharing. We have also discovered that we have amazing family and friends that are more than willing to share their bounty. Yellow squash is always a welcomed gift of love. With that being said, frying it in oil is not my style anymore. We all know it is delicious in so many forms but occasionally we drift back to fond memories of a nice piece of breaded squash strait out of the iron skillet. You know the one I’m talking about, third degree burns on the roof of your mouth! I kept thinking of how I could get that crunch in a healthier version. Oh, and no third degree burns either. I hope you enjoy this recipe for crunchy squash in the air fryer. It’s super easy and it will be a lot less mess to clean up. Enjoy!

Crispy Fried Squash in the Air Fryer

(I’ll give you oven directions also)

1 small squash per person you will be feeding ( sliced)

1 beaten egg

1&1/2 tablespoons of cornmeal ( make sure it is pure cornmeal and not cornmeal mix. I actually found a brand that specified for breading on the packaging.

I used a seasoning blend of salt, pepper and paprika 1/4 teaspoon each

Cooking spray

Slice squash and dip in the beaten egg

Add seasonings to your cornmeal and mix throughly.

Place spiced cornmeal in a shaker with large holes. (A restaurant supply store will have ones like you use for powdered sugar. I also have a cheap salt shaker that has larger than usual holes that works great. )

Shake cornmeal mixture on the squash, turn and dust the other side.

Spray the top side with cooking spray and place face down in a preheated air fryer.

Spray the other side and close the fryer.

Cook at 400 for 10-12 minutes. It just depends on how crispy you want them.

….For the oven, I would cook them at 450 for 12-15 minutes.

This makes a large single serving for 1SP on Weight Watchers. You will just multiply the ingredients for the number of servings you need. Although, 1 beaten egg should coat several squash.
