Party Chicken Salad

Chicken Salad is one of the things I always remember having at any party we had when we were growing up. The chicken salad of that day was hardly ever homemade. Most of the time it was the kind you bought in the little plastic tubs close to the lunch meats in the grocery store. You know the kind I’m talking of, it was really chicken mush. I must say I was quite fond of it on a loaf of soft white bread. Does that stir any memories of bridal showers or baby showers in your day? Although I did love those little chicken salad sandwiches, I have fallen in love with homemade chicken salad. It is super simple to make and it’s sure to be a crowd pleaser at your next party. My recipe is so healthy and delicious you shouldn’t wait for a party to try it.

Party Chicken Salad

1 pound boneless skinless chicken breast (cooked and shredded)

2 cups seedless grapes cut in half

1 cup diced celery

1/3 cup finely diced onion

1/2 cup sliced almonds

1 cup Oikos Triple Zero Vanilla Greek Yogurt

1/2 cup Hellman’s light mayonnaise

1/2 teaspoon salt

1/2 teaspoon black pepper

Mix all the ingredients together and chill a few hours before serving.

If you like really sweet chicken salad, you can add 1-2 teaspoons of Truvia brown sugar blend. Be cautious though. Don’t get it too sweet. Remember the yogurt is sweet.

For those following Weight Watchers : serves 12 @ 2SP (1/2 cup per serving)

I like my chicken salad on Joseph’s Lavish Bread or Ole Xtreme Wraps. If I’m in the mood for crackers, I will spray 1/2 of a Joseph’s Lavish Bread with butter flavored spray and sprinkle it with everything bagel seasoning. Throw it in a 350 degree oven for 3-5 minutes until golden brown. Watch it closely because it can burn quick. Remove it from the oven and let it rest a couple of minutes. Break it into cracker crisp. Weight Watchers: Serves 1 @1SP
