Magic 321 Cake

img_0291-1Sweets were my biggest downfall before I joined Weight Watchers. I cringe thinking of the amount of sugar I consumed in a day. Little Debbie was my best friend. I swear I ate 3 or 4 each day. I never had real breakfast. Just a couple of snack cakes and coffee and I was well on my way to bad choices. After joining Weight Watchers I was introduced to this little magical treat called 321 Cake, or Cake in A Mug. I have my three balanced meals daily and then I always save room for dessert. My go to basic dessert is 321 Cake because it’s delicious, easy and versatile. It is definitely a better alternative to what I use to have. It is just the right size to fill my sweet tooth and not go overboard on calories.

321 Cake

1 box angel food cake mix

1 box sugar free cake mix

Combine dry mixes in an airtight container

To make cake, mix 3 tablespoons of dry mix and 2 tablespoons of water in a mug. Microwave 1 minute. 3SP

Add points for  additional toppings.

I  mixed up a batch using Pillsbury sugar free devil’s food cake mix and Duncan Hines angel food cake mix. ( I think Duncan Hines works best. You have to look for it. When you find it , buy several.) I added 1 cup cocoa powder for rich chocolate flavor. If you are using a yellow cake mix, you can add whatever spices you want to flavor it up a bit.  I spooned it out and I had 40 servings. After calculating the recipe using the nutritional information from the boxes, I got 3 SP each.

*** I am trying to get my healthy oils in. When I make my cake , I add one teaspoon of olive oil with my water. It changes  the texture of the cake. If you add the oil it adds 1SP.

I also only microwaved the cake for 45 seconds. Just play around with the recipe until you get what you like. You can also cook it 6-7 minutes on the cake setting in the air fryer. Lately the air fryer is my favorite method to cook it. I can make the whole family a cake at the same time. I just stir them up in individual ramekins.b

      1. Susan, I usually use olive oil or coconut oil. I hope you like the 321 Cake. It’s always a hit at our house.

    I’m going to try this sometime this week. I’ve been doing pretty good watching what I’m eating, finally seeing the scale go down some. But I crave sweets ALLLLLLL the time. Been trying to compensate my sweet cravings w flavored rice cakes or chocolate covered almonds. But i LOVVVVEEEEE cake must be how you know we’re related. LOL
